The Miyabi Isshin series knives are made in Seki City, Japan. A layer of high-carbon stainless steel (AUS8) is sandwiched between two layers of mild steel, which are laser-cut to achieve the final shape. Through expert heat treatment, the blade is hardened to 57:59 HRC, resulting in a durable, easy-to-resharpen edge. The handle is made of laminated rosewood.
